Chamomile Champagne
Perfect for special occasions, elegant brunches, or unwinding after a long day, this drink offers a gentle, herbaceous aroma and a balanced, non-cloying sweetness that is both refreshing and sophisticated. It’s an easy-to-prepare cocktail that feels instantly luxurious.
What you'll need:
- 5 cups of water
- Lemon peel from one lemon
- Lemon juice
- 1 star anise
- 1/2 cup sparkling water
- 3-4 cardamom seeds
- 5 tbs of chamomile
- 10 g of black pepper
- 1 tbs of ginger
- 1 tsp of sweetener of choice
- 1/2 tbs of salt
- Mesh strainer
Instructions:
- Add 5 cups of water, the lemon peel, cardamom, star anise, black pepper, lemon juice, agave, ginger, and a pinch of salt to a pot.
- Upon reaching a boil, remove the pot from the heat source. Add the chamomile, then cover and permit the mixture to infuse for 10 minutes.
- Strain the mixture and allow it to cool completely overnight.
- Once fully cooled, transfer the concentrated infusion to serving glasses, top generously with chilled sparkling water for effervescence, and garnish as desired before enjoying.
